Opis : Kvaliteta grožđa je osnova za postizanje vrhunskog kvaliteta vina. Stoga, osim redovnih operacija u vinogradu, treba preduzeti i neke druge ampelotehničke operacije, kao što su prorjeđivanje grozdova i uklanjanje listova. Prorjeđivanje grozdova omogućava kontrolu prinosa i kvaliteta grožđa. Uklanjanje listova omogućuje bolje izlaganje grozdova suncu i bolje zrenje i kvalitet grožđa. Utiče na polifenolni sastav grožđa i vina. Polifenolna jedinjenja igraju važnu ulogu za kvalitet grožđa i vina. Utiču na stabilnost vina, kao i na njegova senzorna svojstva i uglavnom su odgovorni za boju, astrigentnost i gorčinu. Ta jedinjenja takođe utiču na strukturu vina i imaju stabilan uticaj kao osnova za starenje vina. Utvrđeno je da fenolna jedinjenja imaju visok antioksidativni potencijal. Cilj ovog projekta je utvrditi utjicaj ampelo - tehničkih mjera na: kvalitet i količinu prinosa, polifenolni sadržaj grožđa, polifenolni sastav vina i antioksidativni potencijal vina.
Grape quality is a base for achieving superior quality wines. Therefore, in addition to regular operations in a vineyard some additional amphelo-technical operations, such us thinning clusters and defoliation should be taken as well. Thinning of clusters provides controlling the yield and quality of grapes. Defoliation allows a better exposure of bunches to the sun and better ripening and quality of grapes. It affects to the polyphenolic composition of grapes and wines. Polyphenolic compounds play an important role in the quality grape and wines. They affect stability of the wine, as well as, its sensory characteristics and they are mainly responsible for colour, astringency and bitterness. These compounds also affect the wine structure and have a stabilizing influence as a basis for wine aging. It was found that phenolic compounds have a high antioxidant potential. The aim of this project is to determine the influence ampelo - technical measures to: the quality and quantity of yield, polyphenolic content of grapes, polyphenolic composition of the wine and antioxidative potential of wine.
